Main Ingredients:
- 1 1/2 pounds cod fillets, cut into large chunks
- 2 tablespoons saffron threads
- 2 tablespoons unsalted butter
- 2 tablespoons coconut oil
Spices and Aromatics:
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 green chili, finely chopped (optional)
- 1 teaspoon mustard seeds
- 10–12 fresh curry leaves (optional)
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
Additional:
- 1 can (14 ounces) full-fat coconut milk
- 1/2 cup fish or vegetable stock
- 1 tablespoon fresh lime juice
- 2 tablespoons fresh cilantro, chopped
- Salt and black pepper to taste
- Cooked basmati rice for serving
Instructions
- Prepare Saffron Butter: Steep saffron threads in warm water. Season cod with salt and pepper.
- Cook Saffron Butter: Melt butter in a skillet, add saffron, set aside. In the same skillet, heat coconut oil, add mustard seeds, then onion, garlic, ginger, chili, and curry leaves.
- Add Spices: Stir in turmeric, coriander, cumin, and chili powder. Pour in coconut milk and stock, then simmer.
- Cook Cod: Add cod, cover, and cook until opaque. Stir in lime juice and cilantro.
- Serve: Drizzle saffron butter over the curry. Serve hot with rice.
