- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 small onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup frozen corn
- 1 (14.5-ounce) can diced tomatoes with juice
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar or Mexican blend cheese
For Garnish:
- Chopped cilantro
- Lime wedges
Instructions
- Heat olive oil: In a large skillet over medium heat, add olive oil.
- Cook turkey: Add ground turkey and cook until browned, breaking it up with a spoon, about 5–6 minutes.
- Add vegetables: Add onion, bell pepper, and garlic. Sauté for 3–4 minutes until vegetables begin to soften.
- Combine ingredients: Stir in black beans, corn, diced tomatoes, rice, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper.
- Simmer: Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
- Finish and garnish: Remove from heat, stir in shredded cheese until melted. Garnish with chopped cilantro and serve with lime wedges.
Notes
- For a spicier version, add diced jalapeños or a pinch of cayenne.
- You can substitute brown rice but increase the simmer time and liquid slightly.
