For the Chicken:

  • 1/2 tsp cayenne pepper

  • 1/2 tsp salt
  • 1/2 tsp black pepper

For Frying:

  • Vegetable oil (for deep or shallow frying)

For Assembly:

  • 4 burger buns (toasted)
  • 1/2 cup mayonnaise
  • 1 tbsp hot sauce (optional, for spicy mayo)

Instructions

  1. Marinate the Chicken: In a large bowl, whisk together buttermilk, hot sauce, garlic powder, onion powder, paprika, cayenne, salt, and pepper. Add chicken fillets and marinate for at least 1 hour (or overnight for best flavor).
  2. Prepare the Breading: In a shallow bowl, mix flour, cornstarch, paprika, cayenne, salt, and black pepper.
  3. Coat the Chicken: Remove chicken from marinade, letting excess drip off. Dredge in flour mixture, pressing to coat well. For extra crunch, double dip by returning to the marinade and dredging again.
  4. Fry the Chicken: Heat oil in a skillet or deep fryer to 350°F (175°C). Fry chicken fillets for 4–6 minutes per side until golden, crispy, and cooked through. Drain on paper towels.
  5. Make the Spicy Mayo: In a small bowl, mix mayonnaise with hot sauce to taste for spicy mayo.
  6. Assemble the Burgers: Spread spicy mayo on buns, then layer with lettuce, tomato, pickles, and crispy chicken. Top with bun and serve hot.

Notes

  • For an even spicier kick, add sliced jalapeños or pepper jack cheese.
