Soup:
- 6 slices thick-cut bacon, chopped
- 1 tablespoon butter
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 3–4 fresh jalapeños, seeded and diced (leave some seeds for extra heat)
- 1 (8-ounce) package cream cheese, softened
- 3 cups chicken broth
- 1 cup heavy cream
- 1 ½ cups shredded sharp cheddar cheese
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 green onions, sliced
- Extra shredded cheddar and crumbled bacon for garnish
Grilled Cheese Dippers:
- Butter
- 4 slices bread
- Shredded cheddar cheese
Instructions
- Soup: In a large pot, cook bacon until crispy. Set aside. Sauté onion, garlic, jalapeños. Add cream cheese, broth, cream, cheddar, paprika, salt, and pepper. Simmer, then serve topped with green onions, bacon, and extra cheddar.
- Grilled Cheese Dippers: Butter bread, add cheddar between slices, grill until golden brown. Slice into strips and serve with soup.
