For the Corn Bites:
- 2 cups frozen corn, thawed and patted dry
- 1/2 cup crumbled cotija cheese
- 1/2 cup shredded pepper jack cheese
- 1/4 cup mayonnaise
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg
- 1/3 cup all-purpose flour
- 1/2 cup panko breadcrumbs
- Vegetable oil for frying
Instructions
- In a large bowl, combine the corn, cotija cheese, pepper jack cheese, mayonnaise, cilantro, lime juice, chili powder, smoked paprika, garlic powder, cayenne, salt, and black pepper. Mix well.
- Add the egg and flour and stir until fully incorporated. Shape mixture into small balls or patties. Roll in panko breadcrumbs.
- In a skillet, heat vegetable oil over medium heat. Fry corn bites in batches for 2–3 minutes per side until golden and crispy.
- Transfer to a paper towel–lined plate to drain. Serve warm with lime wedges or dipping sauce.
Notes
- These bites can be made ahead and reheated in the oven at 375°F for 8–10 minutes.
- For a dipping sauce, mix sour cream, lime juice, and a pinch of chili powder.
