- ¼ cup mayonnaise
- ¼ cup sour cream
- 1 tablespoon lime juice (fresh-squeezed)
Spice Mix:
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon ground cumin
- optional ¼ teaspoon cayenne pepper
Instructions
- Mix Ingredients: In a large bowl, combine corn, mayonnaise, sour cream, and lime juice until well coated.
- Add Spices: Stir in chili powder, smoked paprika, cumin, and cayenne pepper (if desired) until evenly mixed.
- Form Patties: Shape the mixture into small patties, around 1 tablespoon each.
- Fry: Heat oil in a skillet, then fry patties in batches for 2-3 minutes per side until crispy and golden.
- Drain and Serve: Place fried patties on paper towels to drain excess oil. Serve hot with lime juice or salsa.
Notes
- Fresh corn is recommended, but frozen or canned corn can be used if well-drained.
- Adjust spice levels to suit your preference; cayenne pepper can be omitted for less heat.
- If patties are delicate, enjoy them as ‘corn fritters’ for a delicious alternative.
