- 1 tablespoon honey or maple syrup
- 1 clove garlic (minced)
- 1 teaspoon grated fresh ginger
- 1/4 cup warm water
Veggies and Garnish:
- 1 cup shredded carrots
- 1 red bell pepper (thinly sliced)
- 2 green onions (sliced)
- 1/4 cup chopped roasted peanuts
- fresh cilantro for garnish
- lime wedges for serving
Instructions
- Cook the Rice Noodles: Prepare rice noodles according to package instructions, then rinse under cold water and toss with 1 tablespoon sesame oil.
- Make the Peanut Sauce: In a bowl, whisk together peanut butter, soy sauce, rice vinegar, chili garlic sauce, honey, garlic, ginger, and warm water until smooth.
- Combine and Serve: Toss cooked noodles with shredded carrots and bell pepper. Pour sauce over noodles, mix well. Top with green onions, peanuts, and cilantro. Serve with lime wedges.
