Rice Noodles:

  • 8 oz rice noodles

Peanut Sauce:

  • 2 tablespoons sesame oil
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili garlic sauce
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic (minced)
  • 1 teaspoon grated fresh ginger
  • 1/4 cup warm water

Veggies and Garnish:

  • 1 cup shredded carrots
  • 1 red bell pepper (thinly sliced)
  • 2 green onions (sliced)
  • 1/4 cup chopped roasted peanuts
  • fresh cilantro for garnish
  • lime wedges for serving

Instructions

  1. Cook the Rice Noodles: Prepare rice noodles according to package instructions, then rinse under cold water and toss with 1 tablespoon sesame oil.
  2. Make the Peanut Sauce: In a bowl, whisk together peanut butter, soy sauce, rice vinegar, chili garlic sauce, honey, garlic, ginger, and warm water until smooth.
  3. Combine and Serve: Toss cooked noodles with shredded carrots and bell pepper. Pour sauce over noodles, mix well. Top with green onions, peanuts, and cilantro. Serve with lime wedges.

Notes

  • For extra protein, add tofu, grilled chicken, or edamame.
  • Adjust chili garlic sauce for desired heat level.
