Instructions
- Cook Soba Noodles: Cook soba noodles according to package directions, then drain and rinse under cold water.
- Prepare Vegetables: In a large bowl, combine shredded cabbage, carrots, bell pepper, green onions, and cilantro.
- Make Peanut Dressing: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, lime juice, honey or maple syrup, sriracha, ginger, and warm water until smooth.
