Instructions
- Cook the soba noodles: Cook the soba noodles according to the package instructions. Drain and rinse under cold water to stop cooking.
- Prepare the salad: In a large bowl, combine the cooked noodles, shredded red cabbage, carrots, red bell pepper, green onions, and cilantro.
- Make the dressing: In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, lime juice, maple syrup, sriracha, sesame oil, and warm water until smooth and pourable.
- Toss and serve: Pour the dressing over the noodle mixture and toss until everything is evenly coated. Sprinkle with chopped peanuts and toasted sesame seeds. Serve cold or at room temperature.
