Perfect for a light lunch or dinner, this salad is easy to make and bursting with Asian-inspired flavors.

Ingredients

Scale

Soba Noodle Salad:

  • 8 ounces soba noodles
  • 1 cup shredded red cabbage
  • 1 cup julienned carrots
  • 1 red bell pepper thinly sliced
  • 3 green onions sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped roasted peanuts
  • 2 tablespoons toasted sesame seeds

Spicy Peanut Dressing:

  • 1/4 cup creamy natural peanut butter
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon maple syrup or honey
  • 12 teaspoons sriracha or chili garlic sauce (adjust to taste)
  • 1 tablespoon toasted sesame oil
  • 23 tablespoons warm water to thin if needed

Instructions

  1. Cook the soba noodles: Cook the soba noodles according to the package instructions. Drain and rinse under cold water to stop cooking.
  2. Prepare the salad: In a large bowl, combine the cooked noodles, shredded red cabbage, carrots, red bell pepper, green onions, and cilantro.
  3. Make the dressing: In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, lime juice, maple syrup, sriracha, sesame oil, and warm water until smooth and pourable.
  4. Toss and serve: Pour the dressing over the noodle mixture and toss until everything is evenly coated. Sprinkle with chopped peanuts and toasted sesame seeds. Serve cold or at room temperature.
