Instructions

  1. Season Shrimp: In a bowl, toss the peeled and deveined shrimp with chili powder, paprika, garlic powder, cayenne pepper, kosher salt, and freshly ground black pepper until evenly coated.
  2. Cook Eggs: Heat a wok or large skillet over medium-high heat and spray lightly with oil. Pour in the beaten egg whites and cook, stirring, until just set. Remove from the pan. Repeat the process with the whole beaten egg. Set both cooked eggs aside.
  3. Sauté Aromatics: Increase the heat to high and add sesame oil to the wok. Sauté the chopped onions, scallion whites, diced garlic, and crushed red pepper flakes for 1 to 2 minutes until fragrant and slightly softened.
  4. Cook Shrimp: Add the seasoned shrimp to the wok and stir-fry for 2 to 3 minutes until the shrimp turn pink and opaque, indicating they are fully cooked.
  5. Add Rice: Stir in the leftover cooked brown rice, spreading it out to allow the bottom to brown slightly for 2 to 3 minutes. Then mix in the cooked eggs, soy sauce, and Asian fish sauce. Stir everything together well and cook for an additional 2 minutes to combine flavors.
