Description

This Spicy Shrimp with Peach Salad is a delightful combination of succulent shrimp seasoned with a spicy blend of chili powder, paprika, and cayenne, served on a bed of fresh peach salad tossed with a tangy dressing. Perfect for a light and flavorful meal!

Ingredients

Scale

For the Spicy Shrimp:

  • 1 pound large shrimp (peeled and deveined)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Peach Salad:

  • 3 ripe peaches (sliced)
  • 4 cups arugula or mixed greens
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled goat cheese or feta
  • 1/4 cup chopped toasted pecans

Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon white balsamic or red wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Prepare the Spicy Shrimp: In a medium bowl, toss shrimp with olive oil, chili powder, paprika, cayenne, garlic powder, salt, and black pepper until well coated. Cook shrimp in a skillet over medium-high heat for 2–3 minutes per side until pink and opaque.
  2. Make the Dressing: Whisk together olive oil, vinegar, honey, mustard, salt, and pepper in a small bowl.
  3. Assemble the Salad: In a large bowl, combine arugula, peaches, tomatoes, red onion, goat cheese, and pecans. Drizzle with dressing and toss gently to coat.
  4. Serve: Top the salad with warm spicy shrimp and enjoy immediately.

Notes

  • You can grill the shrimp for extra flavor.
  • Substitute nectarines or plums for peaches if desired.
