Description

Spicy Sofritas Tofu is a flavorful and protein-packed vegan dish inspired by Mexican cuisine. Crumbled tofu is cooked with a spicy blend of chipotle, cumin, and chili powder, creating a versatile filling for tacos, burritos, bowls, or salads.

Seasonings:

  • 1 chipotle pepper in adobo sauce (minced)
  • 2 teaspoons adobo sauce (from chipotle can)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Other:

  • ½ cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 tablespoon fresh lime juice
  • Fresh cilantro (chopped, for garnish, optional)

Instructions

  1. Prepare Tofu: Press and crumble the tofu.
  2. Sauté Aromatics: In a skillet, sauté onion until softened, add garlic, and cook until fragrant.
  3. Add Spices: Stir in chipotle pepper, adobo sauce, cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Cook for 1 minute.
  4. Cook Tofu: Add crumbled tofu to the skillet, brown for 5-7 minutes.
  5. Prepare Broth Mixture: Whisk vegetable broth, tomato paste, and lime juice.
  6. Simmer: Pour broth mixture over tofu, simmer until absorbed.
  7. Adjust Seasoning: Taste and adjust seasoning if necessary.
  8. Serve: Garnish with cilantro and serve hot.
