Pie Crust:

  • 1 unbaked 9-inch pie crust

Filling:

  • 1 tablespoon olive oil
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach, roughly chopped
  • 4 large eggs
  • 1 cup half-and-half or whole milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg
  • 3/4 cup crumbled feta cheese

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C). Place the pie crust into a 9-inch pie dish and set aside.
  2. Sauté onion: In a skillet, heat olive oil over medium heat. Sauté onion until soft, about 3–4 minutes. Add garlic and cook for another 30 seconds.
  3. Add spinach: Stir in chopped spinach and cook until wilted, about 2–3 minutes. Remove from heat and let cool slightly.
  4. Prepare egg mixture: In a medium bowl, whisk together eggs, half-and-half, salt, pepper, and nutmeg.
  5. Assemble: Spread the spinach mixture in the pie crust, sprinkle feta over the top, and pour the egg mixture over the filling.
  6. Bake: Bake for 35–40 minutes until set and lightly golden. Let rest for 10 minutes before slicing.
