  • 2 large flour tortillas or wraps
  • 2 tablespoons hummus or cream cheese

Filling Ingredients

  • 2 cups fresh baby spinach
  • ½ cup crumbled feta cheese
  • ¼ cup diced tomatoes (optional)
  • ¼ cup thinly sliced red onion

Instructions

  1. Sauté the Spinach: Heat the olive oil in a skillet over medium heat. Add the fresh baby spinach and cook for 1–2 minutes until just wilted. Season with a pinch of salt and black pepper, then remove the skillet from heat to prevent overcooking.
  2. Warm the Tortillas: Slightly warm the flour tortillas to make them more flexible and easier to roll without cracking.
  3. Spread the Base: Evenly spread 1 tablespoon of hummus or cream cheese on each warmed tortilla. This adds creaminess and moisture to the wrap.
  4. Assemble the Wraps: Layer the sautéed spinach evenly over the hummus or cream cheese. Top with crumbled feta cheese, thinly sliced red onion, and diced tomatoes if using. Distribute the ingredients evenly for balanced flavor in each bite.
  5. Roll and Serve: Roll up each tortilla tightly like a burrito, folding in the sides as you go to secure the filling. Slice each wrap in half diagonally and serve immediately. Optionally, wrap in foil for an easy on-the-go meal.
