For the Casserole:

  • 3 cups cooked shredded chicken
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • 2 cups fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella (for topping)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish with cooking spray.
  2. Prepare the filling: In a large bowl, combine the shredded chicken, artichoke hearts, chopped spinach, cream cheese, sour cream, mayonnaise, mozzarella, Parmesan, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  3. Assemble the casserole: Transfer the mixture into the prepared baking dish and spread evenly. Top with the remaining 1/2 cup of shredded mozzarella.
  4. Bake: Bake for 25–30 minutes, or until the casserole is hot and bubbly and the cheese on top is melted and lightly golden.
