Description

Main Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 pounds fresh spinach, roughly chopped (or 2 packages frozen spinach, thawed and drained)
  • 1 cup ricotta cheese
  • 1 cup crumbled feta cheese
  • 2 large eggs, lightly beaten

Additional Ingredients:

  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh dill, chopped (or 1 teaspoon dried dill)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
  2. Saute onion and garlic: Heat olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic and cook for 1 minute more.
  3. Add spinach: Add the spinach in batches, cooking until wilted. Transfer the spinach mixture to a mixing bowl.
  4. Combine ingredients: Mix in ricotta, feta, eggs, Parmesan, dill, salt, pepper, and nutmeg.
  5. Assemble and bake: Spread the mixture in the baking dish, top with breadcrumbs, and bake for 30-35 minutes until golden and set.
