  • 12 lasagna noodles
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (10-ounce) bag fresh spinach, roughly chopped
  • 15 ounces ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg (optional)
  • 3 cups marinara sauce

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook Noodles: Cook the lasagna noodles according to package instructions, drain, and set aside.
  3. Saute Spinach: In a skillet, sauté onion and garlic, add spinach and cook until wilted.
  4. Prepare Cheese Mixture: Mix ricotta, egg, salt, pepper, and nutmeg. Stir in cooked spinach.
  5. Layer Lasagna: Spread marinara on baking dish, layer noodles, spinach mixture, mozzarella, and marinara. Repeat layers.
  6. Bake: Cover with foil and bake for 25 minutes, then uncover and bake for 15-20 minutes more.
