Manicotti Filling:
- 12 manicotti shells
- 1 tablespoon olive oil
- 1 (10-ounce) package frozen spinach, thawed and squeezed dry
- 15 ounces ricotta cheese
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Other ingredients:
- 3 cups marinara sauce
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven and cook manicotti: Preheat the oven to 375°F (190°C). Boil manicotti shells until al dente, then drain and set aside.
- Prepare the filling: In a bowl, mix spinach, ricotta, 1 cup mozzarella, Parmesan, egg, garlic, salt, and pepper.
- Assemble: Spread marinara on a baking dish. Fill manicotti with spinach-ricotta mixture, place in the dish, cover with sauce and mozzarella.
- Bake: Cover with foil and bake for 25 minutes, then uncover and bake for 10-15 minutes more.
- Serve: Rest for 5 minutes, garnish with parsley, and serve.
