Ingredients
Orzo Pasta:
1 cup uncooked orzo pasta
Vegetables:
2 tablespoons olive oil, 1 small onion diced, 2 cloves garlic minced, 8 ounces mushrooms sliced, 4 cups fresh baby spinach
Additional:
1/2 cup grated Parmesan cheese, 1/4 cup heavy cream (optional), 1 tablespoon unsalted butter, salt and pepper to taste, 2 tablespoons fresh parsley chopped for garnish
Instructions
- Cook Orzo: Cook the orzo according to package instructions until al dente. Drain and set aside.
- Sauté Vegetables: In a large skillet, heat olive oil over medium-high heat. Add diced onion and sauté until softened. Add garlic and sliced mushrooms, cook until tender.
- Combine Ingredients: Add cooked orzo and fresh spinach to the skillet. Stir until spinach is wilted. Reduce heat, then add Parmesan, cream, and butter. Season with salt and pepper.
- Serve: Garnish with parsley and serve warm.
Notes
- For extra flavor, add a squeeze of lemon juice or crushed red pepper flakes.
- Makes a great main dish or a side for grilled chicken or fish.
