Pie Crust:
- 1 9-inch pie crust (store-bought or homemade)
Filling:
- 1 tablespoon olive oil
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 5 ounces fresh spinach, chopped
- 4 large eggs
- 1 cup whole milk
- 1/2 cup heavy cream
- 1 cup shredded Swiss cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C). Place the pie crust into a 9-inch pie dish and set aside.
- Sauté Onion and Spinach: Heat olive oil in a skillet over medium heat. Sauté the onion until translucent, about 3-4 minutes. Add garlic and spinach, cook until wilted. Remove from heat and cool slightly.
- Prepare Filling: In a large bowl, whisk eggs, milk, cream, salt, pepper, and nutmeg. Stir in cheeses. Add spinach mixture and combine well.
- Bake: Pour filling into the pie crust. Bake for 40-45 minutes until set and golden. Let cool before slicing.
Notes
- For a richer flavor, use Gruyère cheese instead of Swiss.
- This quiche can be made ahead and reheated.
- To make it crustless, omit the crust and grease the dish.
