Description

Pie Crust:

  • 1 9-inch pie crust (store-bought or homemade)

Filling:

  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach, chopped
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 cup shredded Swiss cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C). Place the pie crust into a 9-inch pie dish and set aside.
  2. Sauté Onion and Spinach: Heat olive oil in a skillet over medium heat. Sauté the onion until translucent, about 3-4 minutes. Add garlic and spinach, cook until wilted. Remove from heat and cool slightly.
  3. Prepare Filling: In a large bowl, whisk eggs, milk, cream, salt, pepper, and nutmeg. Stir in cheeses. Add spinach mixture and combine well.
  4. Bake: Pour filling into the pie crust. Bake for 40-45 minutes until set and golden. Let cool before slicing.

Notes

  • For a richer flavor, use Gruyère cheese instead of Swiss.
  • This quiche can be made ahead and reheated.
  • To make it crustless, omit the crust and grease the dish.
