This Spinach Quiche recipe is a delightful savory pie perfect for breakfast or brunch. With a flaky pie crust filled with a creamy mixture of eggs, milk, spinach, and cheese, this quiche is a crowd-pleaser.

Ingredients

Pie Crust:

1 9-inch unbaked pie crust

Spinach Filling:

1 tablespoon olive oil
1 small onion finely chopped
3 cups fresh baby spinach roughly chopped
4 large eggs
1 cup whole milk
1/2 cup heavy cream
1 cup shredded Swiss cheese
1/2 cup grated Parmesan cheese
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C) and place the pie crust in a 9-inch pie dish.
  2. Sauté Onion and Spinach: In a skillet, heat olive oil, sauté onion until soft, then add spinach and cook until wilted. Let cool.
  3. Prepare Filling: Whisk eggs, milk, and cream. Add cheeses, nutmeg, salt, pepper, and the spinach mixture. Pour into pie crust.
  4. Bake: Bake for 35-40 minutes until set and golden. Cool before serving.

Notes

  • You can use frozen spinach (thawed and well-drained) instead of fresh.
  • For extra flavor, add cooked crumbled bacon or diced ham.
