Ingredients
Scale
Cake Batter
- 1 box (15.25 oz) vanilla or yellow cake mix
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup water
Cheesecake Layer
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Topping
- 1 1/2 cups fresh mixed berries (strawberries, raspberries, blueberries, etc.)
- 1/4 cup powdered sugar
- 1 teaspoon lemon zest (optional, for added flavor)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or springform pan to prevent sticking.
- Prepare the cake batter: In a large bowl, combine the cake mix with 3 large eggs, 1/2 cup vegetable oil, and 1 cup water. Mix well until the batter is smooth and well combined.
- Prepare the cheesecake layer: In another bowl, beat the softened cream cheese and 1/2 cup granulated sugar until smooth and creamy. Add the 2 large eggs one at a time, beating well after each addition, then stir in 1 teaspoon vanilla extract.
- Assemble the cake: Pour the cake batter evenly into the prepared pan. Carefully spoon the cheesecake mixture on top of the cake batter layer, then use a spatula to smooth the cheesecake layer evenly across the surface.
- Bake the cake: Place the assembled cake in the preheated oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean, noting that some cheesecake residue may stick to the toothpick but the cake portion should be fully baked.
- Cool the cake: Let the cake cool in the pan for about 10 minutes to set, then transfer it to a wire rack and allow it to cool completely at room temperature.
- Prepare the topping: In a small bowl, gently mix the fresh mixed berries with 1/4 cup powdered sugar. Add 1 teaspoon lemon zest if desired for an added bright flavor.
- Serve and enjoy: Once the cake has cooled completely, spread the berry mixture evenly over the top. Slice and serve this delightful spring dessert showcasing creamy cheesecake, fluffy cake, and fresh fruity toppings.
Notes
- Use a springform pan to make removing the cake easier and keep the layers intact.
- Let the cream cheese soften fully at room temperature before mixing to avoid lumps.
- If fresh berries are not available, frozen berries can be used but thaw and drain excess juice first.
- Adding lemon zest enhances the freshness but is optional.
- Ensure the cake is completely cooled before topping with berries to prevent the topping from becoming watery.
- Store leftovers covered in the refrigerator for up to 3 days.
