  • 1/2 cup unsalted butter
  • 1/2 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 4 cups crispy rice cereal

For the Topping:

  • 1 cup semi-sweet chocolate chips
  • 1 cup creamy caramel bits or soft caramels (melted)
  • 1 teaspoon vanilla extract

Instructions

  1. In a large saucepan over medium heat, melt the butter. Stir in the corn syrup, sugar, and salt. Bring to a gentle boil and cook for 1–2 minutes until the sugar dissolves.
  2. Remove from heat and immediately stir in the chocolate chips, melted caramel, and vanilla extract until smooth and well combined.
  3. Gently fold in the crispy rice cereal, stirring until evenly coated.
  4. Use a spoon or scoop to drop heaping tablespoons of the mixture onto a parchment-lined baking sheet. Flatten slightly to resemble classic Star Crunch shape.
  5. Let cool at room temperature for at least 30 minutes, or until set.

  • For softer treats, reduce the amount of cereal slightly.
  • You can also press the mixture into a greased 9×13-inch pan and cut into bars once cooled.
