Steak Bites:

  • 1 1/2 pounds sirloin steak, cut into 1-inch cubes
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Cowboy Butter:

  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 garlic cloves, minced
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt

Instructions

  1. Season the steak: Generously season the steak cubes with salt and pepper.
  2. Cook the steak: Heat olive oil in a large cast iron skillet over medium-high heat. Add steak in a single layer and sear for 1–2 minutes per side until browned and cooked to desired doneness. Transfer to a plate and tent with foil.
  3. Make cowboy butter: Melt butter in a saucepan over low heat. Stir in mustard, lemon juice, garlic, parsley, red pepper flakes, smoked paprika, black pepper, and salt. Cook for 1–2 minutes until fragrant.
  4. Serve: Drizzle cowboy butter over the steak bites or serve on the side as a dipping sauce.
