Broth:
- 1 cup orange juice (about 2 oranges)
- 1/4 cup fresh lime juice (about 2 limes)
- 1 cup chicken broth
Seasonings:
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 2 bay leaves
Additional:
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- Season the Pork: Generously season the pork chunks with salt and pepper.
- Sear the Pork: Heat vegetable oil in a large pot, sear the pork until browned, then set aside.
- Cook Aromatics: Cook onion until softened, then add garlic.
- Add Ingredients: Return pork to pot, add juices, broth, seasonings, and bay leaves.
- Simmer: Cover and simmer for 2-2 1/2 hours until pork is tender.
- Crisp Pork: Uncover, increase heat, cook until pork caramelizes.
- Shred and Serve: Shred pork, crisping edges, and garnish with cilantro.
