Description

Veggie Mixture:

  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 1 red bell pepper (chopped)
  • 2 cups fresh spinach (chopped)

Additional:

  • 1 cup cooked breakfast sausage or chopped ham (optional)
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 2 1/2 cups whole milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • butter or nonstick spray for greasing

Instructions

  1. Prep the Ingredients: Grease a 9×13-inch baking dish. Sauté onion and pepper, add spinach, and cool.
  2. Prepare the Layers: In a bowl, whisk eggs, milk, mustard, garlic, salt, and pepper. Layer bread, veggies, meat, and cheese in the baking dish. Repeat layers.
  3. Soak and Chill: Pour egg mixture over layers, press bread gently, cover, and refrigerate for at least 2 hours or overnight.
  4. Bake: Preheat oven to 350°F. Bake uncovered for 45–55 minutes until set and golden. Rest before serving.
