For the bread:
- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped fresh strawberries
For the cream glaze:
- 1/2 cup powdered sugar
- 2–3 tablespoons heavy cream
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Cream butter and sugar: In a large bowl, cream the butter and sugar until light and fluffy.
- Add eggs and flavorings: Beat in the eggs one at a time, then mix in the vanilla extract and sour cream until smooth.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Combine wet and dry mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the chopped strawberries.
- Bake: Pour the batter into the prepared loaf pan, smooth the top, and bake for 50–60 minutes until a toothpick inserted in the center comes out clean.
- Glaze: Whisk together powdered sugar, heavy cream, and vanilla extract for the glaze. Drizzle over the cooled bread before serving.
Notes
- Toss the strawberries in a tablespoon of flour before folding them in to prevent sinking.
- Store leftovers in the refrigerator and enjoy within 3 days.
