- 2 large eggs, room temperature
- 1/2 cup vegetable oil
- 1/2 cup plain Greek yogurt or sour cream
- 1 teaspoon vanilla extract

Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan with greasing and lining with parchment paper.
- Mix Dry Ingredients: In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Prepare Wet Ingredients: In another bowl, whisk eggs, oil, Greek yogurt (or sour cream), and vanilla extract until smooth.
- Combine Ingredients: Add wet ingredients to the dry mixture and stir until just combined. Fold in the chopped strawberries gently.
- Bake: Pour the batter into the loaf pan and bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
- Cool and Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
