Description

  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder

Wet Ingredients:

  • 2 large eggs, room temperature
  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt or sour cream
  • 1 teaspoon vanilla extract

Additional:

  • 1 1/2 cups fresh strawberries, hulled and chopped

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan with greasing and lining with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Prepare Wet Ingredients: In another bowl, whisk eggs, oil, Greek yogurt (or sour cream), and vanilla extract until smooth.
  4. Combine Ingredients: Add wet ingredients to the dry mixture and stir until just combined. Fold in the chopped strawberries gently.
