Instructions

  1. Cheesecake Filling: In a medium bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth. Gently fold in the diced strawberries.
  2. Wrapping: Lay one egg roll wrapper on a clean surface with a corner pointing toward you (diamond shape). Spoon about 1 tablespoon of the filling into the center. Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Brush the top corner with beaten egg to seal. Repeat with remaining wrappers and filling.
