- 1 egg (beaten, for sealing)
- Vegetable oil (for frying)
- Powdered sugar (for dusting)
Instructions
- Cheesecake Filling: In a medium bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth. Gently fold in the diced strawberries.
- Wrapping: Lay one egg roll wrapper on a clean surface with a corner pointing toward you (diamond shape). Spoon about 1 tablespoon of the filling into the center. Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Brush the top corner with beaten egg to seal. Repeat with remaining wrappers and filling.
- Frying: Heat about 1–2 inches of vegetable oil in a deep skillet over medium heat until it reaches 350°F (175°C). Fry the eggroll bites in small batches, turning occasionally, for 2–3 minutes or until golden brown and crispy.
- Serving: Transfer to a paper towel-lined plate to drain. Let cool slightly, then dust with powdered sugar before serving.
