  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup white chocolate chips
  • ½ cup freeze-dried strawberries, crushed

Instructions

  1. Prepare the filling: In a small bowl, mix the cream cheese, powdered sugar, and strawberry jam until smooth. Scoop small dollops (about 1 teaspoon) onto a parchment-lined plate and freeze for 30 minutes until firm.
  2. Make the cookie dough: In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and vanilla, and mix until combined. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture. Fold in the white chocolate chips and crushed freeze-dried strawberries.
  3. Bake the cookies: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop 2 tablespoons of dough, flatten it in your hand, and place a frozen cream cheese center in the middle. Fold the dough around it and roll into a ball, sealing the edges. Place dough balls on the baking sheet, spaced 2 inches apart, and bake for 12–14 minutes, or until edges are lightly golden and centers are set. Let cool for 5 minutes before transferring to a wire rack.
