Description

A delightful and refreshing Strawberry Crunch Banana Pudding featuring layers of creamy instant vanilla pudding, fresh bananas, juicy strawberries, and crunchy cookie crumbs, perfect for a quick and easy dessert that serves 10.

Ingredients

Scale

Pudding

  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 3 cups whole milk, cold
  • 1 container (8 oz) whipped topping, divided

Layers

  • 1 box (11 oz) Nilla wafers
  • 45 ripe bananas, sliced
  • 2 cups fresh strawberries, sliced

Crunch Topping

  • 1 package (5 oz) pink strawberry sugar wafers
  • 1 cup vanilla cookies or Golden Oreos
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Make Pudding: Whisk together the instant vanilla pudding mix and cold whole milk in a large bowl for 2 minutes until the mixture thickens. Gently fold in half of the whipped topping until the pudding mixture is smooth and creamy.
  2. Prepare Crunch: Pulse the pink strawberry sugar wafers and vanilla cookies in a food processor until fine crumbs form. Transfer to a bowl and mix in the melted unsalted butter until the crumbs are evenly moistened, creating the crunchy topping.
  3. First Layer: Arrange a single layer of Nilla wafers to cover the bottom of a 9×13 inch dish. Spread half of the pudding mixture evenly over the cookie layer.
  4. Add Fruit: Layer half of the sliced bananas evenly over the pudding, followed by half of the sliced strawberries.
  5. Second Layer: Add another layer of Nilla wafers on top of the fruit. Spread the remaining pudding mixture over this wafer layer. Then, add the remaining banana and strawberry slices over the pudding.
  6. Top It Off: Spread the remaining whipped topping over the last layer of fruit, smoothing it out. Finally, sprinkle the prepared strawberry crunch mixture evenly over the top to add texture and flavor.
  7. Chill: Cover the entire dish with plastic wrap or a lid and refrigerate for 2 to 4 hours to allow the layers to set and flavors to meld before serving.

Notes

  • For best results, use ripe but firm bananas to prevent them from becoming mushy.
  • This dessert can be made up to a day in advance and stored in the refrigerator.
  • Consider substituting vanilla wafers with gluten-free cookies to adapt for gluten-free diets.
  • The pudding thickens quickly after mixing, so work efficiently when layering.
  • Use fresh strawberries for the best flavor and texture; frozen berries will add excess moisture.
