Ingredients
Scale
For the crust:
- 2 cups golden Oreos or vanilla sandwich cookies, crushed
- 4 tablespoons unsalted butter, melted
For the filling:
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
For the topping:
- 1 cup freeze-dried strawberries, crushed
- 1 cup golden Oreos, crushed
- 2 tablespoons unsalted butter, melted
Optional garnish:
- Whipped cream
- Fresh strawberries
Instructions
- Prepare the crust: Preheat the oven to 325°F (160°C) and line the bottom of a 9-inch springform pan with parchment paper. In a bowl, combine the crushed golden Oreos with melted butter, mixing until evenly combined. Press this mixture firmly into the bottom of the prepared pan to form the crust. Set aside.
- Make the filling: In a large bowl, beat the softened cream cheese until smooth and creamy. Add granulated sugar and mix until well combined. Stir in sour cream, vanilla extract, and all-purpose flour until smooth. Add eggs one at a time, beating just until each is incorporated to avoid overmixing.
- Bake the cheesecake: Pour the cream cheese filling over the prepared crust and smooth the surface with a spatula. Bake in the preheated oven for 55–65 minutes, or until the edges are set and the center is still slightly jiggly. Once done, turn off the oven and crack the door open. Let the cheesecake cool inside the oven for 1 hour to prevent cracking.
- Chill the cheesecake: Remove the cheesecake from the oven and refrigerate for at least 4 hours or preferably overnight to allow it to fully set and chill.
- Prepare the strawberry crunch topping: In a bowl, mix crushed freeze-dried strawberries and crushed golden Oreos. Stir in melted butter until the mixture becomes crumbly and well combined.
- Finish and serve: Once the cheesecake is chilled, press the strawberry crunch topping evenly over the surface. Optionally garnish with whipped cream and fresh strawberries before slicing and serving. For easiest removal, run a knife around the edges before unlocking the springform pan.
