Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs

- 1/4 cup freshly squeezed lemon juice
- 1/4 cup buttermilk
- 1 cup pureed fresh strawberries
Frosting:
- 16 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tablespoons lemon zest
- 1/4 cup lemon juice
- Fresh strawberries for garnish
Instructions
- Preheat oven to 350 degrees Fahrenheit. Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract.
- Alternately add flour mixture and buttermilk, beginning and ending with flour. Fold in lemon juice and pureed strawberries.
- Divide batter evenly between prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Cool cakes completely on wire racks.
- For the frosting, beat cream cheese and softened butter until smooth. Gradually add powdered sugar, then mix in lemon zest and lemon juice until creamy.
- To assemble, spread frosting on top of one cake layer, place the second layer on top, and frost the top and sides. Garnish with fresh strawberries.
