Frosting:

  • 1/2 cup unsalted butter (softened)
  • 4 oz cream cheese (softened)
  • 2 1/2 cups powdered sugar
  • 1 tablespoon fresh lime juice
  • 1 tablespoon tequila (optional)
  • 1/4 cup pureed strawberries or mango (or a mix)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. Prepare the cupcake batter: Whisk together the flour, baking powder, and salt. Cream the butter and sugar, mix in eggs, vanilla, lime juice, and tequila. Alternate adding dry ingredients and milk, then fold in diced mango and strawberries.
  3. Bake the cupcakes: Divide batter into liners and bake for 18–20 minutes. Cool on a wire rack.
  4. Make the frosting: Beat butter and cream cheese, add powdered sugar, lime juice, tequila, fruit puree, and salt. Beat until fluffy.
  5. Decorate the cupcakes: Pipe or spread frosting on cooled cupcakes. Garnish with sugar/salt, lime wedges, or fruit slices.
