Simple Syrup:

  • 1/2 cup water
  • 2 tablespoons fresh mint leaves, chopped

  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Prepare Mint Simple Syrup: In a small saucepan, combine sugar, water, and mint leaves. Heat until sugar dissolves, then let mint steep and strain.
  2. Blend Ingredients: In a blender, mix strawberries, mint syrup, lemon juice, and salt until smooth.
  3. Strain Mixture: Pass the blend through a sieve to remove seeds, if desired.
  4. Chill and Churn: Refrigerate the mixture, then churn in an ice cream maker. Freeze before serving.

Notes

  • For a smoother texture, strain the mixture before chilling.
  • Adding a splash of vodka can prevent the sorbet from freezing too hard.
