Scale
Dry Ingredients
- 1 cup freeze-dried strawberries, crushed
- 1 cup old-fashioned oats
- 1/2 cup vanilla protein powder
- 1/4 cup shredded unsweetened coconut
- 1 tablespoon chia seeds (optional)
- Pinch of salt
Wet Ingredients
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
Instructions
- Mix dry ingredients: In a large bowl, combine the crushed freeze-dried strawberries, oats, vanilla protein powder, shredded coconut, chia seeds, and salt. Stir them together to create a uniform mixture.
- Prepare wet ingredients: In a separate smaller bowl, stir together the almond butter, honey, and vanilla extract until smooth and well blended.
- Combine mixtures: Pour the wet ingredient mixture into the dry ingredients. Mix thoroughly until fully combined. If the mixture feels too dry, add a small splash of water or more honey to achieve a sticky consistency suitable for rolling.
- Roll into balls: Using your hands, shape the mixture into 1-inch diameter balls. Make sure each ball is compact so it holds together well.
- Chill to set: Place the protein balls on a lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
- Store properly: Once set, store the protein balls in an airtight container in the refrigerator. They will keep fresh for up to one week.
Notes
- You can substitute any nut or seed butter depending on your dietary preference.
- For extra strawberry flavor, roll the finished balls in additional crushed freeze-dried strawberries.
- These protein balls are great for meal prep and make convenient snacks for busy days.
