  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

  1. Mix dry ingredients: In a large bowl, combine the crushed freeze-dried strawberries, oats, vanilla protein powder, shredded coconut, chia seeds, and salt. Stir them together to create a uniform mixture.
  2. Prepare wet ingredients: In a separate smaller bowl, stir together the almond butter, honey, and vanilla extract until smooth and well blended.
  3. Combine mixtures: Pour the wet ingredient mixture into the dry ingredients. Mix thoroughly until fully combined. If the mixture feels too dry, add a small splash of water or more honey to achieve a sticky consistency suitable for rolling.
  4. Roll into balls: Using your hands, shape the mixture into 1-inch diameter balls. Make sure each ball is compact so it holds together well.
  5. Chill to set: Place the protein balls on a lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
