Description

This no-bake Strawberry Shortcake Cheesecake is a delightful and easy dessert that combines a creamy cheesecake filling with a crunchy golden Oreo crust and a sweet strawberry topping. Perfect for a quick treat, it requires no baking and is chilled overnight for a smooth, rich texture paired with fresh strawberry flavors.

Ingredients

Scale

Cheesecake Filling

  • 2 (8 oz) cream cheese, room temperature
  • 1/4 cup sour cream
  • 2/3 cup sweetened condensed milk (7 oz)
  • 1.5 tsp vanilla extract
  • 3 tbsp powdered sugar (optional)

Crust

  • 20 golden Oreos, crushed
  • 3 tbsp butter, melted

Strawberry Topping

  • 1215 golden Oreos, crushed
  • 1.5 oz Strawberry Jello (1/2 box)
  • 12 tbsp unsalted butter
  • 1 cup strawberries, diced
  • 1/4 cup sugar
  • Lemon zest (to taste)

To Serve

  • Whipped cream

Instructions

  1. Prepare Strawberry Sauce: Combine clean, diced strawberries and sugar in a small pot. Cook over low to medium heat for about 8-10 minutes, stirring occasionally until the strawberries soften and release their juices.
  2. Make Cheesecake Filling: While the strawberries cook, mix room temperature cream cheese, sweetened condensed milk, sour cream, and vanilla extract in a mixing bowl until smooth. Taste and add powdered sugar if you prefer a sweeter cheesecake. Set aside.
  3. Make Crust Base: Mix crushed golden Oreos with melted butter until fully combined. Set this mixture aside for assembling the crust in cupcake liners.
  4. Cool and Blend Strawberry Sauce: Remove the strawberry sauce from heat and allow it to cool completely. Once cooled, blend or mash the strawberries to achieve a smoother sauce consistency.
  5. Add Lemon Zest and Prepare Liners: Stir lemon zest into the cooled strawberry sauce. Line a cupcake pan with cupcake liners to prepare for assembly.
  6. Form Crust in Liners: Spoon about 1 tablespoon of the Oreo crust mixture into each cupcake liner. Press firmly with clean fingers or the bottom of a measuring cup to create an even crust layer.
  7. Assemble Cheesecake: Pipe or spoon the cheesecake filling over the Oreo crust in each liner. Then carefully pipe the strawberry sauce into the center of the cheesecake filling to create a strawberry swirl or pocket.
  8. Add Topping and Chill: Sprinkle the top of each cheesecake with the remaining strawberry crunch mixture (crushed golden Oreos, strawberry Jello, and butter). Refrigerate the cheesecakes overnight to allow them to set properly.
  9. Serve: Garnish with whipped cream and additional strawberry crunch topping before serving. Enjoy the creamy, fruity, and crunchy layers!

Notes

  • Ensure cream cheese is at room temperature for a smooth filling.
  • Chill cheesecakes overnight for best texture and firmness.
  • You can substitute golden Oreos with regular Oreos for a chocolate crust.
  • Adjust powdered sugar to your preferred sweetness level.
  • Use fresh strawberries for the best flavor, but frozen can be used if thawed.
