Ingredients
Scale
Main Ingredients
- 6 cups rice Chex cereal
- 12 oz white chocolate chips or melting wafers
- 1 cup freeze-dried strawberries
- 1 cup powdered sugar
- ⅔ cup red or pink/Valentine M&Ms
- 2 Tbsp red, pink and white sprinkles
Optional Add-Ins
- Mini pretzels
- Crushed Golden Oreos
- Mini marshmallows
- Additional white chocolate chips
Instructions
- Prepare the cereal: Add the 6 cups of rice Chex cereal to a large bowl, setting aside for coating later.
- Make strawberry powder: Place 1 cup of freeze-dried strawberries into a food processor and process until they form a fine powder. Some tiny seeds may remain; alternatively, you can crush them using a plastic bag and heavy spoon, though this takes longer.
- Melt white chocolate: Microwave 12 oz of white chocolate chips or melting wafers in a microwave-safe bowl in 20-second increments, stirring in between. When almost fully melted, stir continuously to finish melting without overheating, which can ruin the chocolate.
- Combine strawberry powder with chocolate: Stir 2 tablespoons of the strawberry powder from step 2 into the melted white chocolate until well combined, creating a strawberry white chocolate mixture.
- Coat the cereal: Pour the strawberry white chocolate mixture over the rice Chex cereal in the large bowl and gently stir until all cereal pieces are evenly coated.
- Dust with powdered sugar mixture: In a large plastic zipper bag, mix 1 cup powdered sugar with the remaining strawberry powder. Transfer the coated cereal into the bag, seal, and shake well to ensure even coating of powdered sugar and strawberry powder.
- Cool and add toppings: Spread the coated cereal out on a parchment-lined cookie sheet or transfer back to a bowl to cool completely. Once cooled, fold in ⅔ cup Valentine M&Ms, 2 tablespoons of red, pink, and white sprinkles, and any optional add-ins you’d like. Serve and enjoy!
Notes
- Be careful not to overheat the white chocolate when melting to avoid it becoming grainy or unusable.
- The tiny strawberry seeds in the powder are normal and add texture and flavor.
- Customize your mix by adding mini pretzels, crushed cookies, or marshmallows for extra texture and taste.
- Store the mix in an airtight container to keep it fresh and crunchy.
- This recipe is great for themed parties or holidays like Valentine’s Day with its festive colors and flavors.
