For the streusel filling:

  • 1/3 cup all-purpose flour
  • 1/4 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, melted

For the cookie dough:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Optional glaze:

  • 1/2 cup powdered sugar
  • 1–2 teaspoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Make the streusel by mixing flour, brown sugar, and cinnamon in a small bowl. Stir in melted butter until crumbly. Set aside.
  2. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract and mix until combined. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until a dough forms.
  3. Scoop about 1 1/2 tablespoons of dough and flatten slightly. Add a heaping teaspoon of streusel mixture in the center and pinch the dough around it to seal. Roll into a ball and place on the baking sheet. Gently flatten the top. Repeat with remaining dough and streusel.
  4. Bake for 10–12 minutes, or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  5. If using glaze, whisk powdered sugar, milk, and vanilla together until smooth. Drizzle over cooled cookies before serving.
