  • 1 pound ground beef or ground turkey

Vegetables:

  • 2 cloves garlic, minced
  • 2 bell peppers, any color, diced

Sauce and Seasonings:

  • 1 (15-ounce) can diced tomatoes, with juice
  • 1 (8-ounce) can tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 1 cup uncooked long grain white rice
  • 2 cups low-sodium beef or chicken broth
  • 1 1/2 cups shredded cheddar or mozzarella cheese
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F.
  2. Cook the Meat and Vegetables: In a large oven-safe skillet or Dutch oven, heat olive oil over medium heat. Add ground meat and onion, cook until browned. Add garlic and bell peppers, cook until softened.
  3. Add Remaining Ingredients: Stir in diced tomatoes, tomato sauce, Italian seasoning, salt, pepper, rice, and broth. Simmer, then cover and cook on the stovetop for 15 minutes.
  4. Bake: Sprinkle cheese over the top, transfer to the oven, and bake uncovered for 10–15 minutes until cheese is melted and bubbly.
  5. Serve: Let it rest for 5 minutes before serving. Garnish with parsley if desired.
