Instructions

  1. Brown the Beef: In a large pot or Dutch oven over medium heat, cook the ground beef until browned and fully cooked. Drain excess fat if needed to reduce greasiness.
  2. Sauté Vegetables: Add the diced onion and bell peppers to the pot and sauté for 4–5 minutes until softened. Stir in minced garlic and cook for another 30 seconds until fragrant.
  3. Add Liquids and Seasonings: Stir in the diced tomatoes, tomato sauce, broth, Italian seasoning, paprika, salt, and black pepper. Mix everything well and bring the mixture to a simmer.
  4. Simmer the Soup: Reduce the heat to low, cover the pot, and let the soup simmer gently for 15–20 minutes to allow the flavors to meld together.
  5. Finish with Rice: Stir in the cooked rice and continue simmering the soup for another 5 minutes to heat the rice through and thicken the soup slightly.
