Bell Peppers:
- 4 large bell peppers (any color), tops cut off and seeds removed
Filling:
- 1 pound ground beef or turkey
- 1 cup cooked rice
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 cup shredded cheddar cheese, divided
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Garnish:
- Chopped fresh parsley for garnish
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and grease a baking dish.
- Cook the filling: In a skillet, cook onion, garlic, and meat. Add rice, tomatoes, 1/2 cup cheese, seasoning, salt, and pepper.
- Stuff the peppers: Fill the peppers with the mixture and top with remaining cheese.
- Bake: Cover with foil and bake for 30 minutes, then uncover and bake for 10-15 minutes more.
- Finish: Garnish with parsley before serving.
