Description

Bell Peppers:

  • 4 large bell peppers (any color), tops cut off and seeds removed

Filling:

  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 cup shredded cheddar cheese, divided
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Garnish:

  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Cook the filling: In a skillet, cook onion, garlic, and meat. Add rice, tomatoes, 1/2 cup cheese, seasoning, salt, and pepper.
  3. Stuff the peppers: Fill the peppers with the mixture and top with remaining cheese.
  4. Bake: Cover with foil and bake for 30 minutes, then uncover and bake for 10-15 minutes more.
  5. Finish: Garnish with parsley before serving.
