  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

Topping:

  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice

Instructions

  1. Prepare Crust: Preheat oven to 325°F. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into bottom of a 9-inch springform pan.
  2. Make Filling: Beat cream cheese and 1 cup sugar. Add eggs, one at a time, then vanilla and sour cream. Pour over crust.
  3. Bake: Bake for 50-55 minutes until almost set. Cool, then chill for 4 hours.
  4. Prepare Topping: Cook cornstarch and water in a saucepan. Add peaches, berries, and lemon juice. Thicken, cool, and spread over cheesecake. Serve chilled.
