Pasta:

  • 12 oz rotini or bowtie pasta

  • 1/2 cup yellow bell pepper (chopped)
  • 1/4 cup red onion (thinly sliced)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh basil (chopped)

Dressing:

  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 garlic clove (minced)
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta: Cook the pasta according to package directions until al dente. Drain and rinse under cold water to cool completely.
