Chicken:

- 1/2 cup chopped onions
- 3 cloves garlic (minced)

Thickening Agent (optional):
- 1 tablespoon cornstarch mixed with 1 tablespoon cold water

Instructions
- Prepare Ingredients: Place the chicken in the crockpot and add chicken broth, heavy cream, sun-dried tomatoes, mushrooms, onions, garlic, thyme, paprika, salt, and pepper. Stir gently.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
- Thicken (optional): Thirty minutes before serving, stir in Parmesan cheese. For a thicker sauce, add the cornstarch slurry and simmer uncovered until thickened.
- Serve: Garnish with parsley and serve over rice, pasta, or mashed potatoes.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Add baby spinach in the last 15 minutes for extra greens.
