For the casserole:
- 3 cups cooked and shredded chicken breast
- 1 bag (10–12 oz) tortilla chips (lightly crushed)
- 1 can (10 oz) diced tomatoes with green chilies (drained)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced onion (optional)
- 1/4 cup sliced black olives (optional)
- Chopped green onions or cilantro for garnish
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Mix the ingredients: In a large bowl, combine the shredded chicken, diced tomatoes, cream of chicken soup, sour cream, taco seasoning, and onion if using.
- Layer the casserole: Grease a 9×13-inch baking dish and layer with crushed tortilla chips, chicken mixture, and cheeses.
- Bake: Bake uncovered for 25–30 minutes until hot and bubbly.
- Garnish and serve: Top with black olives and garnish with green onions or cilantro before serving.
