Chicken:
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon harissa paste (or 1 teaspoon smoked paprika plus a pinch of cayenne)
- 1 tablespoon fresh lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Vegetables and Garnish:
- 4 large carrots (peeled and cut into sticks)
- 1/2 cup pitted dates (halved)
- 1/3 cup shelled pistachios (roughly chopped)
- 2 tablespoons fresh cilantro or parsley (chopped, for garnish)
Instructions
- Preheat Oven: Preheat oven to 425°F (220°C).
- Prepare Marinade: Whisk together olive oil, honey, harissa paste (or smoked paprika and cayenne), lemon juice, cumin, coriander, salt, and black pepper.
- Marinate: Coat chicken thighs and carrot sticks in the marinade.
- Bake: Arrange chicken skin-side up on a baking sheet. Roast for 30 minutes, add dates, and roast for additional 10-15 minutes.
- Finish: Sprinkle with pistachios and cilantro before serving.
