Ingredients
Scale
For the Chicken
- 0.75–1 lb chicken breasts, cubed
- 1 Tbsp corn starch
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/2 tsp red pepper
- 1 sliced bell pepper (optional, based on instructions)
- 1–2 sliced jalapeños (optional, based on instructions)
For the Sweet Chili Sauce
- 1 Tbsp butter
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 3/4 cup sweet chili sauce
- 1–2 Tbsp honey
For Garnish
- 1 lime, sliced
- 3 Tbsp green onions, chopped
Instructions
- Preheat the Oven: Preheat your oven to 375ºF (190ºC) to prepare for baking the chicken and vegetables.
- Prepare the Chicken: Cube the chicken breasts into 1-inch pieces. In a bowl, toss the chicken with corn starch, black pepper, salt, and red pepper to coat and season evenly.
- Bake the Chicken: Spread the seasoned chicken pieces on a baking sheet along with sliced bell peppers and jalapeños. Bake in the oven for 20 minutes, flipping the chicken halfway through to ensure even cooking and browning.
- Make the Sweet Chili Sauce: While the chicken bakes, melt the butter in a saucepan over medium heat. Add minced garlic and ginger and sauté until fragrant, about 1-2 minutes. Stir in the sweet chili sauce and honey, allowing it to simmer gently for a few minutes so the flavors meld.
- Combine: Once the chicken is fully cooked, pour the prepared sweet chili sauce over it. Toss everything together thoroughly to coat the chicken pieces completely in the flavorful sauce.
- Serve: Serve the sauced chicken over cooked rice or a fresh salad as desired. Garnish with chopped green onions and lime slices for a fresh, zesty finish.
Notes
- You can adjust the amount of red pepper to make the dish milder or spicier according to your preference.
- For best results, use fresh garlic and ginger to enhance the flavor of the sauce.
- Serve with steamed rice or a crisp green salad to balance the heat and sweetness of the sauce.
- Make sure to flip the chicken halfway through baking to ensure even browning and cook.
- Leftovers can be refrigerated and reheated gently on the stovetop.
