- 1 lb sweet Italian sausage (casings removed)

- 3 cloves garlic (minced)
- 1 can (15 oz) kidney beans (drained and rinsed)
- 1 can (15 oz) black beans (drained and rinsed)
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 2 tbsp tomato paste
- 1 tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup water or beef broth
- Chopped cilantro or green onions for garnish (optional)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat.
- Add diced onion, bell pepper, and garlic, and sauté for 4–5 minutes until vegetables are soft.
- Stir in chili powder, smoked paprika, cumin, oregano, salt, and pepper, and cook for 1 minute until fragrant.
- Add the tomato paste and stir to coat the mixture.
- Pour in diced tomatoes, tomato sauce, beans, and water or broth. Stir to combine.
- Bring the chili to a simmer, then reduce heat to low and cook uncovered for 25–30 minutes, stirring occasionally, until thickened and flavorful.
- Serve hot with your favorite toppings.
Add the sweet Italian sausage and cook, breaking it apart with a spoon, until browned and fully cooked.
