  • 1 can (15 oz) kidney beans (drained and rinsed)
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup water or beef broth
  • Chopped cilantro or green onions for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add the sweet Italian sausage and cook, breaking it apart with a spoon, until browned and fully cooked.

  3. Add diced onion, bell pepper, and garlic, and sauté for 4–5 minutes until vegetables are soft.
  4. Stir in chili powder, smoked paprika, cumin, oregano, salt, and pepper, and cook for 1 minute until fragrant.
  5. Add the tomato paste and stir to coat the mixture.
  6. Pour in diced tomatoes, tomato sauce, beans, and water or broth. Stir to combine.
  7. Bring the chili to a simmer, then reduce heat to low and cook uncovered for 25–30 minutes, stirring occasionally, until thickened and flavorful.
  8. Serve hot with your favorite toppings.
