Sweet Italian Sausage Chili:

  • 1 pound sweet Italian sausage, casings removed and crumbled
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can diced tomatoes, drained
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • Chopped fresh parsley or shredded cheese for garnish (optional)

Instructions

  1. Heat olive oil and cook sausage: Heat olive oil in a large pot, add crumbled sausage, and brown for 6–8 minutes.
  2. Add vegetables: Add onion, bell peppers, and garlic. Cook for 5 minutes until softened.
  3. Stir in tomato paste: Add tomato paste and cook for 1 minute.
  4. Add remaining ingredients: Add crushed tomatoes, diced tomatoes, beans, spices, salt, and pepper. Simmer for 30–40 minutes.
  5. Adjust seasoning and serve: Taste, adjust seasoning, and serve hot garnished with parsley or cheese.

Notes
