Sweet Italian Sausage Chili:
- 1 pound sweet Italian sausage, casings removed and crumbled
- 1 tablespoon olive oil
- 1 large onion, diced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 (28-ounce) can crushed tomatoes
- 1 (15-ounce) can diced tomatoes, drained
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- Chopped fresh parsley or shredded cheese for garnish (optional)
Instructions
- Heat olive oil and cook sausage: Heat olive oil in a large pot, add crumbled sausage, and brown for 6–8 minutes.
- Add vegetables: Add onion, bell peppers, and garlic. Cook for 5 minutes until softened.
- Stir in tomato paste: Add tomato paste and cook for 1 minute.
- Add remaining ingredients: Add crushed tomatoes, diced tomatoes, beans, spices, salt, and pepper. Simmer for 30–40 minutes.
- Adjust seasoning and serve: Taste, adjust seasoning, and serve hot garnished with parsley or cheese.
Notes
- You can swap sweet Italian sausage for spicy if you prefer heat.
- This chili is even better the next day after the flavors have melded.
